From La Loma farm, known for its innovative processing methods and creating new flavors, we have received another exceptional coffee this year.
This batch is processed using a method called "Whiskey Barrel Natural," which involves aging the coffee in actual whiskey barrels.
For this batch, only high-brix coffee cherries were selected. They were fermented in a tank with ten types of microorganisms based on wheat, sorghum, and corn, along with a small amount of whiskey. After fermenting, the mixture was rested in a cellar for 20 days before being aged in oak barrels previously used for whiskey production for 30 days.
Enjoy the rich, spirit-like aroma reminiscent of rum, along with sweet flavors suggesting vanilla and chocolate, and a smooth finish that lingers. This unique method truly brings out a distinctive taste profile in the coffee
