Halo Hartume is located in Yirgacheffe, Gedeb, one of the most renowned coffee-producing regions in Ethiopia. The majority of the coffee cultivated here comprises indigenous varieties that have been optimized over time to thrive in the unique local environment. Characterized by its light acidity and floral aroma, this lot offers a quintessential expression of Ethiopian terroir.

The processing method for this batch, Carbonic Maceration, was inspired by winemaking techniques. In this process, carbon dioxide is introduced into the fermentation tanks to create an anaerobic environment, and the coffee undergoes anaerobic fermentation for approximately 96 hours.

This method enhances the naturally vibrant flavors of Ethiopian coffee, adding complex notes of cassis and the elegant aroma of black tea.
